Skinny Orange Chicken

The other day, I made some Skinny Orange Chicken. It was a huge success to say the least. It was another Pinterest recipe, so I will definitely move it to my Done and done board with good comments.

Here’s my take on this fairly quick, but definitely easy meal. You can find the original recipe here. For once, I actually followed the recipe for the orange chicken glaze, but I did add a couple of things.

I actually halved the recipe, because I added veggies. I kept the left over glaze, so I can make it again. I bought a bag of frozen stir-fry veggies, plus cans of bean sprouts, baby corn, and water chestnuts. I threw the canned veggies in with the chicken and glaze while it cooked down, cooked the frozen veggies in a separate pot. Once the frozen veggies are cooked, add them and let them simmer in the glaze.

Serve it over some jasmine rice and boom, you have dinner 🙂

Bring on the new!

Welcome to the new

It’s been several months in the making, but I’m finally ready to debut my new, redesigned website. I think it’s something that not only showcases my photography, but also my personality.

I have to send a shout out to my dear friend, Caesar Vielmas, and his company blu27 for their amazing work on making this vision come true.

My hope is to continue to update the galleries with new photos, and start blogging on a regular basis. The blog will feature not only photography sessions, but tips, recipes from my kitchen, quilting projects, and of course, racing adventures.

So, I invite you to take a look around, and leave some feedback on what you think. I hope you like it as much as I do!

Until next time,
